Tawa Chicken...my way
Ingredients:-
250 gm chicken
2 tbsp ginger garlic and chilli paste
2 tbsp raw papaya paste
1 tsp turmeric
1 cinnamon stick
1 black cardamom
1 star anise
3 cloves
½ fennel seeds
5-6 black peppercorns
1 bay leaf
1 green cardamom
1 tsp white sesame seeds
1 kashmiri chilli
4-5 cashew nuts
Salt as per taste
Pinch of sugar
½ tsp chat masala
Handful of finely chopped corriander
1 green chilli
Mint leaves
1 thinly sliced onion
1 finely chopped tomatoes
2 tbsp oil/butter
Marinade chicken:-
First marinade chicken with ginger garlic chilli salt turmeric and papaya paste.most preferably overnight or 3-4 hours and cooked in 6 whistles in cooker before going for making Tawa Chicken.
Method:-
1) Roast all whole masala mentioned above one by one and grind coarsely.
2)Heat non-stick skillet ,put oil or butter ..add onions ,stir fry till brown .remove half of it and keep aside for garnishing.
3) Add tomatoes.. Saute and cook till it melts.
4) Now add all masala powder ,salt, and pinch of sugar to it. Mix and keep sauting.
5) Add all the cooked Chicken .mix well..keep frying with the masala ....toss it ..fry it till the water contents evaporates...
6) Finally garnish with fried onion chopped corriander,mint leaves and fried cashew nuts...
Serve hot as a starter
