Eggless fruits n nuts Chocolate cake made using multigrain flour specially made for my kids....very nutritious and healthy....added mixed fruits with their favourite choco chips and dry nuts....absolutely devine and sinful cake...do try
Ingredients:-
1½ cup multi grain flour + 2 tbsp apf ( for dusting)
2 Tbsp cocoa powder(unsweetened)
1 tsp coffee powder
1 tsp baking powder
1 cup icing sugar + 2 tbsp brown sugar
½ tsp baking soda
½ cup yoghurt
½ cup veg oil/ homemade ghee
Pinch salt
2 tsp warm milk
Chocolate chips,
Fruits and nuts
Method:-
Preheat oven at 180 deg ,.Grease and dust the cake tin and make ready.Take a bowl ..sieve and add all dry ingredients.Blend sugar,brown sugar,and oil till smooth and creamy,.Add yoghurt ,warm milk and blend again till fluffy.Now add gradually wet ingredients to the dry ingredients .Use cut and fold method....check the batter consistency .( if required add warm milk) ..dust half of fruits n nuts in the flour.. And mix it with the batter ,so that it will get mixed and settle between the cake..pour the batter in the tin from the center .Tap the tin 2-3 times and again garnish with the remaining fruits ,nuts and Chocolate chips.
Bake the cake @ 180 deg for 35 min...
