Vegetable Uppit/Upma
Very common, versatile,simple ,one pot meal like breakfast.....healthy and nutritious....give a try
Ingredients:-
1 cup semolina,
1 cup water,
½ cup ghee,
salt as per taste,
1 tbsp sugar,
½ tsp mustard seeds,
4-5 curry leaves,
1 small chopped onion,
1 cup mixed veggies(green pea's,beans,carrot chopped into small pieces
½ tsp split black lentil(urad dal),
2 green chillies,
½ tsp finely chopped ginger,
Lil turmeric,
lemon juice ,
grated coconut.
Method:-
1) Roast semolina/rava in vanaspati ghee till light brown.keep aside.
2) In a same kadhai,make tempering for that heat kadhai and pour in 1 tbsp ghee and put mustard seed..urad dal.let it crackle then add green chillies, curry leaves, n ginger.. Let it release spicy aroma,and then add onions, salt n sugar. When the onion turns translucent,add veggies n cook for 2 min..now add water, turmeric n give a boil finally add roasted semolina mix n keep stirring. Put the lid n lower the flame for 2 min . when done garnish with chopped corriandern grated coconut,.Serve with piece of lemon and fine sev ,green chutney.
