Crisp Fried ladies fingers in masala/talelli bhende masala (Goan)

Talelli Bhendi Masala(Goan)./Crisp fried ladies fingers in masala.
goes well with Chapati and Cucumber raita.

Ingredients:-
250 gm Bhendi/Ladies fingers
7-8 Kashmir Chillies coloured one ..not spicy  (washed ,deseeded and soaked in warm water)
2 big onions thinly sliced
1 big tomato thinly sliced
5-6 garlic cloves
1 tbsp corriander seeds
1 clove
2-3 black peppercorns
1 tsp tamarind pulp/or coconut  vinegar
3 tbsp oil
Salt as per the taste.
Pinch of sugar
1 bay leaf

Tempering
Oil
Mustard seeds
Pinch of hing
Green chilli

Method:-

Heat 2 tbsp oil in a pan ...add onion..fry till cooked add garlic cloves...peppercorn corriander seeds and clove to this and  fry till I'll brown  in colour... finally add kashmiri chillies (drain out water completely).
Fry roast with onion mixture.
Cool down completely.
Grind  adding tamarind pulp or vinegar till very smooth paste .
Now transfer it to the  same pan .. add lil warm water and bay leaf.. salt and tomatoes . mix well and cover with the lid ..cool till oil floats on the top.

Meanwhile wash ...pat dry bhendi with the cloth and cut into rings or ur desired shapes.
Heat tava/skillet ...add few drops of oil ..Mustard seeds. .green chilli..and pinch of hing/asafoetida.
 When mustard seeds starts crackling  add Bhendi ..n keep fry roasting sprinkle lil salt and sugar.
Fry till crisp and cooked.

Serving:-
Pour Lil gravy on plate .then add crisp Bhendi ...and visa versa....finally top with crisp bhendi..
Garnish  with corriander
Serve hot with chapati...and cucumber raita.😊

Note:- Adjust spices according to ur taste
