Prawn's Fried Rice..restaurant style

Prawns fried rice ...restaurant style


Ingredients:-

4 cups Long grain rice or Basmati Rice par boiled with salt  & 1tbsp oil , 8 cups water and drained out and cooled completely
(most preferably make the rice 4-5 hrs before and keep)

200 gm Tiger prawns deveined n cleaned .. marinated in tumeric and salt.

1/2tbsp ginger garlic  minced
1/2 carrot finely copped
1 spring onions (white part finely chopped)
 Handful of cabbage  thinly Sliced
 pinch of ajinomotto  1/2 tsp( optional)
 1/2 tsp dark soya sauce
 1/2  tsp white pepper powder
 2 green chillies .. julianly cutted
1 tbsp Sesame oil
Salt as per the taste

 Method:-

Heat  wok ,pour in oil ..then  add  ginger garlic , and green chillies to it...stir.fry well then  add half of the chopped veggies ( carrot ,cabbage and white onion part of spring onion)
Keep mixing  ..let the vegies become bit crispy then add prawns to it .. keep stirring....
Add soya sauce ,ajinomotto , salt  and white pepper powder..keep sauting..
Crack in eggs ,stir in quikly to  form scramble egg...mix well ,  let the spicy aroma emmits .. keep frying.... then add  rice  to it .. mix and toss the rice properly..(check with the  salt and spice taste.) u can add if u want more

Finally..add  half of the cabbage ,and spring onion (green part to it) keep roasting the rice.. .roast well... Toss it...  .  keep mixing..  .. .. finally put off the flame and cover it with lid.

serve hot .... with chilly garlic chinese sauce , soysauce, and white vinegar

Note:- msg or ajinomoto is totally optional...you can skip this in this recipe .I have to mention it in the above ingredient list as the recipe is restaurant style.
