Shevayacho Uppit /shevayacha upma.(vegetable vermicelli upma)...nutritious,quick n versatile breakfast .loaded with veggies
Ingredients:-
1 cup vermicelli,
1 cup water,
1 cup carrot chopped, green peas, beans,
grated coconut,
Ghee,or oil,
Salt as per taste,
Lemon juice,
pinch sugar,
red chilli powder,
Pinch turmeric,
curry leaves,
green chilli chopped,
chopped ginger,
mustard seeds,
finely chopped onion
Method:- In a pan ,roast vermicelli in ghee or oil till light brown, let it cool,. In other vessel pour in ghee, and add mustard seeds .when it splutters add green chilli, ginger, curry leaves, turmeric, red chilli powder, then add onion.stir fry well when the onion turns translucent add veggies n fry again add salt n sugar to it ..Now add roasted vermicelli mix well n then add water. Add Lil lemon juice .keep stirring.. Let the vermicelli cook n water evaporates.... When done put of flame n garnish with grated coconut n coriander ....again sprinkle lil lemon juice if required and serve with green chutney(optional)
