Goan Vegetable Chops/vegetable croquettes
..A lip smacking snack is nothing but Goan's version of vegetarian cutlets..filled with the goodness of all veggies and binded with the aromatic and tangy recheado masala ..Very different in taste than any other cutlet. .learned from my MIL....tempting isn't it?
Serves :- 4 person
Time:- 30 min
Ingredients:-
For stuffing mixture:-
1 cup all veggies(cabbage,carrots, beans,spring onions,capsicum) thinly sliced,
Salt as per taste
Pinch of turmeric
1 chopped green chilli
1/2 tsp white pepper powder
Butter for greasing

For outer covering:-
2 big potatoes( boiled and mashed)
White pepper powder
Salt as per taste
3 tbsp recheado (Portuguese red masala)
For binding
1 cup cornflour paste(binding consistency)
Fine semolina/rava/sooji
Oil for frying
Method:-
Heat the pan,grease with butter, add all the veggie, salt ,turmeric,pepper powder ,chopped green chillies and roast fry well,put off the flame.Now add lemon juice a bit..let the mixture cool. keep aside.
Now ,take a bowl,add in mashed potatoes,peper powder,and salt.mix well to make soft like dough..Now make small roundles and pat it on your palms...paste with thin layer of recheado masala and stuff 1 spoon mixture ...close it n give oblong/oval shapes...
Likewise make more.,.dip in the corn batter n roll over semolina .. N deep fry the chops..serve hot with Plain tomato sauce
