Khaman Dhokla/Non fried savoury snack

"KHAMAN DHOKLA"...(A Non fried SNACK)
Gujaratis speciality...and a very versatile Gujarati  snack..which is now easily available on  every street of the country.It can also be made using soaked and grinded chana dal.This is instant verion using gram flour..  very easy to make  savoury  snack.



Ingredient:-
1 1/2 cup gram flour/besan
2 tbsp sooji /rava
1 tsp crushed ginger n green chilli
11/2 tsp sugar +1tbsp sugar for tempering
1 eno pkt. .green colour
1/2 tsp salt
1/2 lemon juice  for tempering mixture
1 tbsp oil  for batter
1 cup sour buttermilk.
1 tbsp oil for tempering
1tsp mustard seeds
1 green chilli cut into 4 peices
Few curry leaves
Pinch of turmeric
1tsp sesame seeds
Pinch of hing
2 tbsp water
Finely chopped coriander for garnishing
Grated coconut for garnishing (optional)

Method:-
Take a bowl...add  gram flour/besan...sooji/rava..salt sugar..oil ..crushed ginger..chilli ...and buttermilk.
Now mix it with the spoon  properly..and blend in blender ... (which gives smooth and fluffy texture).remove it  in the bowl  and remember  the batter consistency should be thinner than toothpaste.
Prepare the steamer by adding water in it.
Grease the tin with lil oil. .
Add eno to the batter and  pour it in the greased tin as soon as possible...
Adjust the tin in the steamer..cover the lid of the steamer..
Cook it on medium flame for about 10-15 min.
Prick with the sharp knife or tootpick...if itcomes out clean..then the dhokla is done
Let it be in the steamer for while..then remove and keep it to cool.
Demould it and place it on the serving plate.

Prepare tempering:-
Heat oil in tadka pan
Add mustard seeds...when it crackles add hing..sesame seeds...green chilli..curry leaves. .turmeric.
Add water and sugar.
Give a boil.put off the flame.
Now add lemon juice..mix it.
Let it cool down.

Pour this tadka on dhokla.spread it properly .garnish with coriander and coconut.
Sprinkle some red chilli powder.
Cut it into cubes and serve with  green chutney.
