Kulle Vindalho or Crab Vindalho/Vindaloo or Vinha d' alhos....
Is Authentic Goan delicacy.Completely no oil recipe..crabs cooked in vindaloo spicy &..tangy masala.Its actually a Portuguese origin recipe...used to prepare meats..specially pork. But I have given it a little variation using Crabs and Chicken.
Ingredients
4 -5 medium size crabs
Masala to grind:-
1.5 tbsp coconut vinegar
7-8 kashmiri red chillies
5-6 peppercorns
5 cloves
1/2" cinnamon
1 tbsp sugar
Salt as per taste
1/2 turmeric,
6-7 garlic cloves
1/2" ginger
1/4 cup water
Other ingredients:-
1 big onion thinly sliced
1 green chilli slited
1 bay leaf
Handful of finely chopped coriander.
Note:- this recipe is completely "No oil recipe"
Method-
1) Clean & wash crabs.marinate with pinch of turmeric and salt.keep aside.
2) Grind the masala mentioned above to a very fine paste.
3) Now take a deep bottom kadhai or pan.Add in all the ginded paste and crabs.marinade crabs 5-6 hours ..thus put the pan in the refrigerator.
4) Remove the pan out of fridge and bring the crabs to it room temperature.
5) keep the pan on the low flame and cook for about 10 min.
6) Add in thinly sliced onion , bay leaf and green chilli. Adjust vinegar and salt as per your taste.
7) Put the lid and cook for more 10 mins on low flame.
8) put off the flame and garnish with finely chopped coriander and serve hot with fresh buns/pav. Or Roti s.
