Mugachi bhaji


Mugachi bhaji

This is a typical maharashtrians side dish or rassa bhaji..which is very common in konkan regions.Green mung means green lentils.Sprouted green mung is very high in protien.Here is my mothers version of Mugachi bhaji which is accompanied with fresh buns/pav.


Ingredients:-
1.5 cup sprouted mung
1 big onion finely chopped
1 big tomato finely chopped
1 tsp turmeric
1/2 tsp garam masala
1/2 malwani masala
1/4  tsp red chilli powder
Salt as per taste

Masala to be roasted and grinded
3 tbsp dry coconut
Lil cinnamon
3-4 garlic cloves
1 small onion

Tempering:-

1/2 tsp mustard seeds
1/2 tsp cummin seeds
Few curry leaves
2 garlic cloves crushed
Pinch of hing /asafoetida
2 tbsp oil

Method:-

Roast n Grind  coconut mixture and keep ready
Assemble  all the ingredients on one plate.keep ready
Heat oil in a vessel, ..add mustard seeds..when spluttering add cummin seeds..garlic..pinch of hing..and curry leaves...put the lid of the vessel for seconds..
Remove the lid and add onion...saute till it turns translucent...then add tomatoes and salt..mix well .put the lid for a min..so that toomatooes will melt completely.
Now add all masala powders mentioned above... keep sauting..
Now add grinded coconut paste  .keep mixing.
Finally add sprouted mung ..mix n cover the vessel with the deep plated lid.
Pour in little water over n cook for about 20 min.
Garnish with finely chopped coriander and serve hot with freshbuns/pavs or chapati/ rotis.,
