Paneer Lajawab

Highly nutritive and healthy version of paneer recipe...Most favourable during small parties/occasions..I made this on my hubby's bdae..n it is called as one of my signature dish at home now.One more veg recipe is added to my veg list :-)
"Paneer Lajawab"....truly a very scrumptious and sinful dish.Give a try





Ingredients:-

200 gm paneer,
3 red tomatoes ,
2 big onions,
1/2 tsp cummin seeds,
3 cloves ,
2 kashmiri mirchi,
1/2 tsp Cinnamon powder
Nuttmeg powder 1/2 tsp,
Coriander powder 1/2 tsp
1tsp red chilli tikhalal powder,
1/4 tsp fennel seeds powder,
1 bay leaf.
2 pinch ajwain,
1/2 tsp dry ginger powder,
1 black cardamom,
4-5 cashews
4-5  almonds (soaked in water for 15 min, and peeled)
Few pomegranate seeds or kishmish( as per your choice),
kasuri methi 1 tbsp roasted n powdered on palms,
Oil 2 tbsp.
1/2 cube butter,
1tbsp yoghurt,
salt as per taste,
Sugar as per taste.

Method:-

Heat oil in a pan..

Add cumin seeds/ jeera, 5-6 cashews, 3-4 almonds, cloves,black cardamom, kashmiri chilli,  tomatoes n 1 1/2 onion   fry well till the onion  becomes translucent n tomatoes cooked.

Put off the flame n let the mixture cool.
Grind the mixture with yoghurt to a very fine paste...keep aside.

Take another vessel add butter,bayleaf/tejpatta, and all masala powders one by one... grated ginger n finely chopped 1/2 onion..keep sauting.

Let the onion turns brown then add grinded mixture, put Lil water  if required.lid the vessel for 2 min .

When the masala is cooked, add salt n sugar,.keep stiring..... Add kasuri methi n chopped coriander mix well .keep stirring again.
Finally add Paneer cubes n let it cook in the gravy for 1 more min...put off the flame....
Garnish with fried cashews ,kishmish or pomegranate seeds n chopped coriander on top   with Lil cream.
Serve hot with lacchedar parathas or naans.enjoy.
