Simple ,very quick and delectable rice,...Veg pulav/pilaf,served with curd raitas and papads...it can be served with any curries or condiments you want😊
Ingredients:-
4 cups Basmati rice
4½ cups water/vegetable stock
2 tbsp ghee or Lil
2 cups mixed vegetables ( cauliflower florets, green peas, carrots, beans,beet).
Pinch turmeric
1 big onion finely chopped
2 tbsp ginger garlic paste
1 tbsp green chilli and corriander paste
Whole garam Masala( 4 peppercorns, 1" Cinnamon stick, 1 bay leaf,½ tsp cumin seeds, 2 black cardamom, 2-3 green cardamoms,3 cloves}
Salt as per taste
½ lime juice
Fried onion ,cashews and Lil corriander for garnishing
Method:
Wash and soak rice in water for 10 min. Drain out water and keep aside.
Meanwhile heat oil/ ghee in cooker ,add in all whole Masala one by one..
Add chopped onion and saute till it turns little brown,then add ginger garlic corriander and chilli paste,keep sauting till spicy aroma hits you.
Add turmeric ,salt and all the vegetable ..
Mix well ,suate for 2 min,then add rice,mix properly and add vegetable stock ,lime juice
Put the lid of the cooker and give 2 whistles.
Remove the knob and let the steam release by itself.
Serve hot ..garnish with fried onions,cashews and corriander.
and Lil beet.
